Dole Pineapple Shrimp Ceviche Recipe from Tortilla Jo’s

This past Friday, I experienced Dole Days of Summer at Downtown Disney District in Anaheim, California. The event offers entertainment and new menu items throughout the area with Dole pineapple. The one dish I was most looking forward to trying was the Pineapple Shrimp Ceviche from Tortilla Jo’s.

This was a fantastic appetizer that was very light and refreshing. Perfect for these hot days we have been having in Orange County! This is one dish I had to try making for myself.

Pineapple-Shrimp-Ceviche-Dole-Hawaii2Once you are done cooking up your shrimp chop it up into easy to bite (and scoop) pieces.

Pineapple-Shrimp-Ceviche-Dole-Hawaii3Chop up your pineapple and veggies and place them in a bowl together. Isn’t it just gorgeous? Look at the at beautiful color. If you don’t like shrimp you could stop here and have yourself a nice fruit salsa.

Pineapple-Shrimp-Ceviche-Dole-Hawaii1Serve up your pineapple shrimp ceviche with some tortilla chips. I love the taste of blue corn tortilla chips. They also seem to hold up better to dipping.

I tend to scale down the spicy flavors in my dishes – to the dismay of my husband – but he went ahead and added some Sriracha to his and said it was delicious.


The recipe I followed is on the official Dole website. I sized the recipe down since there are only two of us. I also chopped down the two-hour lime marination part of the recipe. I didn’t have that much time. Still tasted great without marinating! Follow the recipe on the Dole website if you are taking this to a party.


1/2 pound shrimp, peeled and deveined
1 lime
1 DOLE® pineapple
1/2 Red Onion, diced
1 roma tomato, diced
1/2 jalapeno chile, diced
1/2 cucumber, diced
1/2 tablespoon fresh mint, chopped
1/2 tablespoon fresh cilantro, chopped
salt and pepper, to taste

1. Peel the tails from the shrimp and boil. Cool shrimp and dice into bite-sized pieces.

2. Squeeze the lime into a small bowl to make sure you get any unwanted bits out. You just want the juice. Place the shrimp and lime juice in a mixing bowl to marinate.

3. Chop the pineapple, red onion, roma tomatoe, jalapeño, cucumber, mint and cilantro. Once done chopping combine these ingredients into a bowl with the shrimp.

4. Season to taste with salt and pepper. Serve with your favorite hot sauce and tortilla chips.
